Overview

Verena Lochmuller is Development Chef at the renowned Ottolenghi Test Kitchen and has created many of the exciting sweet and savoury dishes and products enjoyed across Ottolenghi delis and restaurants, as well as contributed to cookbooks Shelf Love and Extra Good Things. Learn some of the beloved dishes from Verena herself in this special class at Leiths.

The menu will showcase a range of dishes incorporating the different textures and flavours that Ottolenghi is famous for, as well as a deliciously sweet dessert.

Ottolenghi cookbooks will be available to purchase on the day.

The Menu: 

  • Egg and ‘cresto’ – jammy eggs, buttermilk and mustard aioli, and watercress pesto
  • Puttanesca baked salmon with tomato anchovy oil and olive and caper salsa
  • Olive oil roasted new potatoes with rosemary and za’atar
  • Rhubarb and cardamom brown butter cake

Course Structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently. Regardless, there is always more than enough food to go around, and often food to take home too. 

Your day will consist of practical cookery in the Leiths kitchens. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.  

Practicalities

What’s included:  

  • Refreshments on arrival 
  • A recipe booklet 
  • All ingredients provided and weighed out for you in advance 
  • We do the washing up 

 

What to bring: 

  • Flat soled shoes 
  • Long trousers and a long-sleeved top are advisable

We are happy to make adjustments where possible. However, some classes are unsuitable for people with particular intolerances as the menu would need to be completely different. Verena Lochmuller is a recipe and product developer. She was born in Germany, grew up in Scotland and studied pastry and baking arts in New York City. She has been at Ottolenghi since 2015 and for the last five years has been the Head of Product Development at the Ottolenghi Test Kitchen. She has created sweet and savoury products that have become staples at Ottolenghi delis, and curated dessert menus for the group’s restaurants.

Verena has contributed her recipes to two Ottolenghi Test Kitchen books: Shelf Love and Extra Good Things, as well as other online Ottolenghi publications. Currently, she is working as a co-author on the new Ottolenghi cookbook, set to be published in September 2024. Verena brings a playful touch to familiar, comforting recipes by using unexpected ingredients and techniques. She firmly believes that a good pastry recipe is a secret weapon in every kitchen!
