Overview

Leiths’ Cooking with Confidence series is now available to those on an exclusively vegetarian or plant-based diet. We teach the fundamental kitchen skills to produce tasty and beautifully presented dishes without the need for meat or fish, and all of our recipes can be easily adjusted to be made without dairy or eggs too! From learning the basics of bread and pasta to perfecting your pastry and presentation, you will be trying out your new skills and dishes on friends and family in no time at all.

The ‘Cooking with Confidence’ course series is designed to help you go from beginner to confident in the kitchen, and takes place one evening a week for 6 weeks. Through exploring a range of exciting and versatile recipes, you’ll build up a rounded cooking skillset, focusing on a new skill each week from baking and breadmaking to knife skills.

The evening format gives you freedom to learn on your terms around your 9-5 commitments.

(Please note that whilst this can be delivered as a plant-based course students may be sharing the kitchen with those cooking with eggs and dairy)

Example recipes:

  • Smoked tofu larb salad
  • Salad of slow roast tomatoes, aubergine, harissa chickpeas and basil
  • Soda bread with whipped seaweed butter
  • Black pepper pastry with mushroom cream and pickled apple
  • Cinnamon Beignets
  • Pear, date and amaretto strudel

Course Structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently. Whatever the ratio, there is always more than enough food to go around, and often food to take home too. 

Your evening session will comprise of a mixture of practical cookery and demonstrations performed by the teacher who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.  

Practicalities

What’s included:  

  • A Leiths apron 
  • Refreshments on arrival 
  • A recipe booklet 
  • All ingredients provided and weighed out for you in advance 
  • We do the washing up 

 

What to bring: 

  • Flat soled shoes 
  • Long trousers and a long-sleeved top are advisable 
  • A notebook and pencil 

 

Allergies and dietary restrictions 

We are happy to make adjustments where possible. However, some classes are unsuitable for people with particular intolerances as the menu would need to be completely different.
