Overview
Step into the world of fermentation on this one-day class at Leiths dedicated purely to pickling and kimchi. Having grown in popularity amongst the food community in recent years, pickling and fermenting vegetables is a great way of preserving and adding nutrient-rich probiotics and flavour dimension to any dish.
This class will take you through each recipe from start to finish, exploring the science behind the fermentation process to assist you in perfecting your pickling and fermentation, as well as some classic recipes. At the end of this session, you’ll take all your creations with you, prepped and ready to be left to ferment for a few days or weeks at home, before being enjoyed.

Course Structure
Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently. Whatever the ratio, there is always more than enough food to go around, and often food to take home too.
Your evening will comprise of a mixture of practical cookery and demonstrations performed by the teacher who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.

- Long trousers and a long-sleeved top are advisable

We are happy to make adjustments where possible. However, some classes are unsuitable for people with particular intolerances as the menu would need to be completely different.
