In readiness for a new intake of Diploma students, our teachers are ironing their chef’s whites and making final tweaks to the curriculum for the Foundation Term.
When our new students arrive, they will hit the ground running learning how to make a stock with maximum flavour and how to cook an omelette in the classic French style among many other classical and contemporary core skills.
There is a strong focus on knife skills in the upcoming term too, a basis upon which the students will continue to build throughout the term and the year more widely.

The name of the game this term is helping students to build a core understanding of cooking skills which those staying on for the Intermediate and Advanced Term can explore further as they develop more refined techniques.
When the Diploma is well and truly underway in October, we’ll do a deep dive on the dishes our new students will be tackling. But in the meantime, we can give you a teaser of a new addition to the curriculum which comes in the form of an autumnal Date and Walnut Tart.
In other words, the sooner our new students start, the better. We can’t wait to welcome them.
