KS3 Curriculum – Chocolate Orange Cheesecake

Perfect for developing essential skills in baking and presentation, it’s a sweet success for aspiring young chefs.

Ingredients (serves 4)

  • 210g chocolate digestive biscuits (or chocolate cookies)
  • 50g butter
  • 200g cream cheese
  • 3 tbsp icing sugar
  • 150ml double cream
  • 2 oranges
  • 10g dark chocolate 

Required Equipment

  • 2 x foil trays approx 18×10 cm
  • 3 x mixing bowls
  • Rolling pin
  • Small saucepan
  • Wooden spoon
  • Metal dessertspoon
  • Box grater
  • Electric hand whisk
  • Chopping board
  • Vegetable knife

Method

  1. Break up and place the biscuits into a mixing bowl and crush them finely with the end of a rolling pin
  2. Melt the butter in a small saucepan. Add the biscuit crumbs and mix well until the crumbs are fully coated in butter and the chocolate has melted. Divide equally between the two into two foil trays and press down firmly and evenly using the back of a metal spoon
  3. Grate the chocolate on a fine grater and tip into a mixing bowl
  4. Zest the two oranges using a fine grater and add to the bowl
  5. Finally, add the cream cheese and icing sugar and mix together thoroughly using a wooden spoon
  6. Place the double cream into a mixing bowl and whisk with an electric hand whisk or balloon whisk until the mixture hold its shape as soft peaks
  7. Using a metal spoon carefully fold into the cream cheese mixture
  8. Divide the mixture evenly onto the cheesecake base and gently level out the top
  9. Carefully slice the skin off the two oranges and segment the flesh
  10. Decorate the top of the cheesecake with the orange segments
  11. Place in the fridge for at least 2 hours to firm up before serving.
  12. Eat and enjoy!

Practical session notes

  • If students are working in pairs, use two foils, approximately 10 x 18 cm
  • If a student is working individually, either use one 10x18cm foil and half the quantity, or use a full recipe in a 20cm round foil container
