Take a Culinary Journey at Leiths – Spring 2024

Join us at Leiths during the Easter holidays for a one week immersive course, continuing throughout April and into May with a wide offering of courses for beginners and improvers, that take you to varying degrees of advancement. With timings to suit the 9 to 5 or the school run, whatever your aspirations and level there is a culinary journey for everyone this spring at Leiths.

One week courses starting 8 April 2024 – for five days of concentrated learning: 

Key Cooking Skills With no previous experience necessary, this course is designed to cover numerous skills and techniques in each recipe you cook and is a great way to boost your cooking ability in a short, concentrated period of time. By the end of the week, you’ll be equipped with a set of versatile skills to give you confidence and enthusiasm in the kitchen. This course is part of a series that can be taken in any order.  

Intermediate Cooking Skills  This course takes confident cooks to another level with an enviable set of skills learnt in one week including meat cooking, filleting, soufflés, pastry, breads, pasta and preserving. By the end of the week, you’ll have worked your way through a series of delicious recipes and developed a broad range of more challenging cooking techniques to fuel creativity and freedom in your cooking.

Patisserie Specialism starting 18 April 2024:

An Introduction to Patisserie Will teach you a thorough skillset in the fundamentals of patisserie in just 6 weeks (two days a week). Open to beginners, this is the perfect place to start if you’re looking to master the complex art of patisserie.

One evening a week, six week courses starting 23 April 2024:

Cooking with Confidence Evening Course – Part 1 Is our evening course for anyone who wants to go from beginner to confident in the kitchen. You will explore versatile and exciting recipes while learning new skills each week from knife skills to baking, soups, sauces, meat, fish cooking and much more. Our Cooking With Confidence courses can be taken in any order. 

Cooking with Confidence Evening Course – Part 2 Regardless of having done part 1 or not, this course instils confidence in the kitchen with a new set of exciting recipes and skills, helping you become more adventurous with your cooking. From emulsions to Choux pastry, you’ll become a master-chef in the making. 

Cooking with Confidence Evening Course – Go Green (Vegan & Vegetarian)  For anyone on a vegetarian or plant-based diet, this course will cover fundamental kitchen skills, along with how to attain maximum taste and texture, through exciting and delicious recipes without the need for meat or fish. 

One day a week, five week course starting 24 April 2024:

Complete Cook Course – Part 1 Takes place one day a week for 5 weeks from 10am – 2.30pm. You can learn how to become a well-rounded, complete cook with core kitchen skills to elevate dishes for both everyday and occasions, with meat and sauces expertise, fish and shellfish skills, all the way through to baking and desserts.
