This immersive, skills-focused workshop provides a comprehensive introduction to working with fresh fish, as taught on our professional culinary programmes.
Participants will learn how to assess quality and freshness when selecting fish, and will be guided through preparation techniques for both round and flat fish, including filleting and cooking methods. The session will also include an introduction to shellfish, with hands-on preparation and cooking of squid.
The day will be a balance of practical cookery and teacher-led demonstrations, offering participants a strong foundation in fish preparation and cookery.
Following the practical session, guests will enjoy a relaxed lunch featuring the dishes they’ve prepared, accompanied by refreshments and shared with fellow participants.
