Spend a day in the company of our expert Leiths teachers and whip up a sophisticated three-course winter feast, ready for you to take home and serve at your evening dinner party or family gathering. This indulgent menu includes a host of winter warming recipes that can be prepped and cooked ahead of time, while also teaching a range of invaluable cooking skills to give you lasting confidence in the kitchen, in true Leiths fashion.

For starters, you will prepare celeriac with smoked egg yolk, followed by a hearty duck confit with thyme potatoes and red cabbage and finish with a crowd pleasing chocolate and amaretti roulade with cherries.

This is a beginner level class, and while you will cover the basics, you will also learn niche skills such as how to confit and preserve, about emulsion sauces, mousses and cooking with egg whites. The perfect class for any keen dinner party host and food-lover, keen to share their love of good food.

Menu:

  • Celeriac with smoked egg yolk, hazelnuts and maitake mushrooms
  • Duck confit with a herb crumb
  • Boulangere thyme potatoes
  • Braised Red cabbage with marmalade
  • Chocolate and ameretti roulade with cherries

A mezze style lunch will be provided for you by Leiths.
