Summary The Art of Food Presentation - Techniques to Elevate your Dish

Presenting a beautiful plate of food is a skill all of its own and it can seem an intimidating prospect to master. Presenting your food with attention and care will ultimately elevate your food and heighten the overall dining experience of your guests.

If you are confident in creating delicious food but want to know how to elevate it through presentation, we have created a course to de-mystify and simplify the professional tricks of the trade. The class focuses on fundamental techniques such as knife skills and preparation in addition to key principles of plating such as the use of odd numbers, colour, texture, central height, border, plate choice, structure and the natural shape of ingredients. We will also give inspiration and ideas for finishing touches, quick cheats and garnishes.

As students, you will witness three demonstrations of dishes, which will each be presented in two different styles. Guided by your Leiths chef, you will then cook some of the food elements and present two dishes of your own, leaving with the confidence to implement a professional finish when plating up your food.

This class is ideal for proficient home cooks.

The menu will change according to the season, below is an example menu from a recent class:

Celeriac or cauliflower and almond soup

Beetroot and goats cheese salad

Duck or Venison with a shallot and pomegranate puree, kale and hazelnut dressing

Chocolate nemesis with freeze dried raspberries

Class structure

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the Leiths tutors. Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • Refreshments on arrival
  • A recipe booklet
  • All ingredients provided and weighed out for you in advance
  • Lunch of your own making or sharing platters prepared by the school
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different.
