Join guest chef Angela Malik for this vibrant evening class to learn the secrets of cooking a classic biryani and how to make the dish your own.

A reminder of a common heritage, this rice dish unites the people of India, Pakistan and Bangladesh with different regions and families possessing their own unique recipes. It encompasses many culinary delights of the Indian subcontinent - tender meat, fluffy long-grain rice and a blend of fragrant, warming spices. There’s no wonder why it remains a fast favourite with diners across the globe and a coveted festive offering at special occasions.

On this course, Angela will teach you how to make a delicious biryani from start to finish, including tips on what rice and pot to use, how to perfectly cook your rice, how to create layers, what spices to incorporate, and the unique recipe styles by region.

As well as cultural understanding and some delicious recipes, you’ll also learn a range of cooking skills for continued confidence in the kitchen in true Leiths style. A light supper of your own making will be provided to end the night along with a glass of wine.

Class structure

Your class will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.

Unless otherwise stated, you will be eating the food that you have cooked during your class for dinner, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • All ingredients provided and weighed out for you in advance
  • Lunch of your own making or sharing platters prepared by the school, both with Louis Latour wines
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

We are happy to make adjustments where possible. Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different. Angela Malik

Former Leiths Diploma student Angela Malik has established herself as a successful teacher. She is known for combining exciting flavours with fantastic, seasonal British ingredients and is a recognised expert of Asian food.  

Angela has appeared as a regular panellist on BBC Radio 4 the Kitchen Cabinet and on shows such as C4 Sunday Brunch, ITV This Morning and Kirstie Allsop’s Perfect Christmas.
