Summary Baking with Sarit Packer of Honey & Co

We’re thrilled to be working once again with Sarit Packer, founder of the hugely-loved Middle Eastern eatery Honey & Co, which she runs with her husband Itamar.

Based on their wonderful bible The Baking Book, this class will teach you how to create the gorgeous enriched doughs filled with spice and fruit that we associate with Israel.

Typical recipes taken from 'Honey and Co At Home' and 'Honey and Co The Baking Book' may include:

  • Harissa and goat’s cheese buns
  • Spinach & egg filo pie
  • Knafe
  • Tahini, preserved lemon & white chocolate cake
  • Chocolate and pistachio cookies

Class structure

Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently – whatever the ratio, there is always more than enough food, and often food to take home too.

Your day will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.

Unless otherwise stated, you will be eating the food that you have cooked during your class for lunch, usually with wine or elderflower cordial around a communal table. If your class does not involve cooking lunch you will enjoy delicious sharing platters prepared by the school.

What is included:

  • Lunch of your own making or sharing platters prepared by the school, both with Louis Latour wines
  • We do the washing up!

What you need to bring:

  • Flat soled shoes
  • Long trousers and a long sleeved top are advisable

Some classes are however unsuitable for people with particular intolerances – where the menu would need to be completely different. Sarit Packer

Born in Northern Israel, Sarit Packer has had an incredibly colourful culinary career, including two moves to London, training as a chef in Butlers Wharf cookery school, working at the Orrery in Marylebone, running an all day bistro, heading the pastry section in Ottolenghi and setting up Nop in Soho as executive chef. In 2012, Sarit and her husband, Itamar, set up Honey & Co, a tiny diner serving traditional, homey Middle Eastern fair in London’s Fitzrovia, followed by the opening of Honey & Smoke and Honey & Spice.

Sarit and Itamar have written four cookbooks, write a weekly recipe column for FT Weekend Magazine and host a podcast "Honey & Co: The Food Sessions".
