A junior pastry chef is an entry-level role working as part of a pastry team station in a professional kitchen. Working closely with the head chef or pastry chef. Their responsibilities in the kitchen include preparing the station for prep and service, weighing out ingredients, managing stock, and performing basic preparative tasks like making reductions and pastry bases.
Famously, these chefs have the longest hours in any kitchen, rising very early to allow doughs to prove and time for patisserie to set in the fridge, but also are the last to finish at night as pudding is the last course to be served. Working hours will vary depending on the workplace, but most commonly junior pastry chefs will work around 40-50 hours per week.
This role offers a great progression route for aspiring pastry professionals. Working directly under pastry chefs equips junior pastry chefs with the experience, knowledge and skills as well as insight into the creative and operational aspects of a pastry kitchen. With such experience, they may progress into the role of a head pastry chef.
