What is a chef de partie?

A chef de partie, also known as a station chef or line cook, is responsible for managing a specific section of the kitchen, such as fish, vegetable, pastry, sauces or meat. Their responsibility is to conduct and oversee the preparation, cooking and plating of dishes on their station.

In larger kitchens, the chef de partie may also have to oversee junior members of staff, including a commis chef and a demi-chef de partie in larger organisations.

The Chef de partie is one of the most common roles in a professional kitchen. Several chef de partie will be working across various sections to ensure an efficient and smooth service. They’re responsible for checking deliveries, maintaining kitchen hygiene and keeping their station running efficiently.

This role is best suited to individuals with culinary experience, particularly for those who have progressed through the ranks of the kitchen. The most likely role for a chef de partie to progress into is a sous chef, followed by a head chef.

What skills are needed to be a chef de partie?

Those wanting to work as a chef de partie will need to be able to demonstrate that they possess the following skillset:

  • High standards for personal, kitchen and food hygiene
  • Proficient knife skills
  • Strong communication skills and an ability to work in a team
  • Familiarity utilising kitchen equipment
  • The ability to consistently replicate dishes, maintaining quality in flavour, texture, aroma and presentation
  • Excellent organisational and time-management skills, especially for managing the workflow of their station
  • A passion for cooking and the culinary arts
  • Leadership potential, especially in terms of guiding junior staff.

What salary is a chef de partie on?

A chef de partie’s salary will vary depending on the type of kitchen and the size. The industry average for this particular role is between £34,000 and £38,000.

As a chef de partie early starts are a given to ensure you and your team are ready for service each day. However, as you climb up the ranks, focusing more on grill rather than larder dishes, you’ll be able to leave as soon as the last main course is served.

Demi-Chef de Partie

A chef with junior responsibilities for the running of a particular section, answerable to the head of that section – the chef de partie.

Junior Sous

Usually in charge of ensuring kitchen operations run smoothly, running the pass during service and freeing up the sous chef to focus on menu development.

Sous Chef

A key link between the head chef and the kitchen. The sous chef ensures each section of the kitchen is running smoothly, often doing a combination of office administration and cooking.
