Valentines Menu 2022: Soft corn tacos

The dough can be made a day ahead. The tacos can be cooked up to 2 hours ahead and warmed through in the oven to serve.

Makes 12

100g masa harina (available online) or maize flour
100g plain flour
Pinch of salt
120ml-150ml cold water
½ tsp white wine vinegar
1 tbsp rapeseed or olive oil
2-4 tbsp rapeseed or olive oil, for cooking


  1. Mix the 2 flours and salt in a bowl. Add the water and olive oil and mix to a smooth dough. (If it’s too sticky add a little more masa harina, or, if it’s too dry, add a drop more water.)
  2. Divide the dough into 12 equal balls (about 50g). Cover the dough balls and leave to rest in the fridge for at least 10 minutes.
  3. Flatten the first ball of dough with your hands and using a little flour roll it between 2 pieces of baking parchment until it is 2mm thick. Repeat with the other balls of dough.
  4. Cut squares of baking parchment to allow you to stack the tacos as you work, without them sticking together. Cover the pile of tacos and store in the fridge until you are ready to cook.

To cook the tacos

  1. About 15 minutes before you want to eat, lightly oil a frying pan and place over a medium heat.
  2. Cook the tortillas for approximately one minute on each side, or until lightly coloured and they lose translucency. Cover the cooked tacos with a clean tea towel until the whole batch is cooked and you are ready to serve.
