Valentines Menu 2022: Guacamole

This recipe can be made a day ahead. The acid in the lime stops the avocado browning, just make sure you cover it carefully with cling film, wax wrap or baking paper directly onto the surface of the guacamole.

Ingredients

Serves 2


1 lime
1 green chilli
½ small bunch of coriander, washed, dried and leaves picked
1 ripe avocado
Salt and freshly ground black pepper

Instructions

  1. Zest the lime with a fine grater, then cut in half and squeeze the juice.
  2. Halve, deseed and finely chop the chilli.
  3. Roughly chop the coriander leaves, cover with damp kitchen paper and store in the fridge until required.
  4. Halve and stone the avocado, then peel it and place the flesh in a bowl. Mash the avocado with a fork until fairly smooth or alternatively blend until smooth in the small bowl of a food processor.
  5. Season with salt and pepper, then add the zest, juice and chilli to taste and stir well.
  6. Cover carefully, and place in the fridge until ready to serve.
  7. Stir the chopped coriander through the guacamole just before serving.
