Valentines Menu 2022: Charred sweet corn, tomato, red onion, coriander and chilli salsa

Ingredients


½ small red onion, finely sliced
½ red chilli, de-seeded and very finely diced
1 clove garlic, crushed or finely grated
2 tbsp olive oil
1 tbsp red wine vinegar
1 Corn on the cob, leaves removed
Olive oil
½ bunch fresh coriander
2 medium tomatoes, quartered deseeded and chopped
Pinch of sugar
Salt and freshly ground black pepper

Instructions

  1. In a bowl mix the onion, chilli, garlic, oil and vinegar. Season with a little sugar, salt and pepper and set aside for at least 10 minutes but this can be done the day before.
  2. To cook the sweetcorn, either pre-heat griddle until just smoking, lightly brush the corn with oil and place the corn on the griddle, turning every 30 seconds until the corn has softened slightly and has charred a little. Alternatively bring a pan of water to the boil and cook the corn for 2 minutes.
  3. When the corn is cool enough to handle, carefully cut the kernels away from the husk. Set aside.
  4. Gently wash and dry the coriander, pick the leaves from the stems and roughly chop.
  5. Mix the tomatoes, sweet corn and coriander into the salsa base and allow to come to room temperature for 15 minutes before serving.
  6. Adjust the seasoning when ready to serve.

Note: If you have spare salsa it will keep in the fridge for 2 days and is a great accompaniment for chicken or fish.
