Roast Chicken


1.35kg chicken
Olive Oil
Sea Salt


  1. Heat oven to 200 degrees/gas mark 6.
  2. Place the chicken in a roasting tray and drizzle with olive oil. Massage the oil into the chicken and season with sea salt.
  3. Roast for about 1 ¼ - 1 ½ hours until the juices run clear. You can also check by holding a skewer in the thickest part for 10 seconds. It should be piping hot on your wrist.
  4. Remove from the oven and allow to cool slightly.
