Poached peaches with crème anglaise and crushed amaretti

Ingredients

Serves 4


6 amaretti biscuits, crushed
300ml crème anglaise
4 ripe peaches
250ml wine
140g sugar
400ml water
1/2 orange, cut into slices
1/2 lemon, cut into slices
2 basil stalks and leaves

Instructions

  1. Cut the peaches in half. Twist to separate and remove the stone.
  2. Place the peach halves into a shallow pan, cover with the wine, water, sugar, fruit slices and basil. Cover with a cartouche.
  3. Bring to a simmer and cook gently for 15 minutes.
  4. Lift the peaches out of the liquor and slide off the skins.
  5. Serve the poached peaches with the crème anglaise and some crushed amaretti biscuits.

The poaching liquor could be served as a chilled shot alongside the dessert.
