Mascarpone and elderflower cream

Ingredients
100ml mascarpone
100ml double or whipping cream
2 Tbsp Elderflower cordial
3 Tbsp Icing sugar
Instructions
- Place all the ingredients in a medium sized bowl and whisk using electric beaters until just thick enough to hold its shape (too far and it will not be smooth in texture), adding a little extra icing sugar if required to taste. Cover with cling film and chill until required.
