Hot Raw Beetroot

Hot Raw Beetroot


Serves 4

500g raw beetroot
50g butter
salt and freshly ground black pepper
a squeeze of lemon juice


  1. Peel the beetroot and put it through the julienne blade of a food processor or grate it on the coarsest side of the grater.
  2. Heat the butter in a frying pan until starting to foam. Toss the beetroot in it for 2 minutes until hot but still crunchy.
  3. Season with salt, pepper and the lemon juice. Serve at once

Note: Chopped dill, grated horseradish or a teaspoon of wholegrain mustard can be added to the cooked beetroot.
