Foolproof Fish with Leiths Alumna Libby Silbermann

Leiths Diploma graduate Libby Silbermann ( is a London-based food stylist working across editorial, advertising and TV projects. When not styling other people’s cookbooks, she’s writing her own. Her latest cookbook, Foolproof Fish, is out now.

My current project: I’m currently working on the food styling and props for author and doctor Dr Rupy Aujla’s next cookbook. Shooting it with the fantastic David Loftus.

My favourite ingredient: Such a tricky question! I use a lot of lemons in my cooking.

My favourite drink: An oat milk flat white or a cold glass of Chablis (at very different times of the day!)

My most-used cookbook: I’m currently loving Ottolenghi’s Test Kitchen book and I love all of Diana Henry’s books.

My favourite kitchen gadget: Microplane

My signature dish: I make a really good carbonara which I hope even Italians would be proud of.

My takeaway of choice: Tonkotsu for ramen or Dishoom.

My most memorable meal: The best fresh truffle tortellini in a tiny restaurant up a mountain in Courmayeur. They didn’t have a menu but just brought things out and everything was delicious!

My desert island dish: I could eat dim sum or dumplings every day and not get bored

My next project: I’m hoping to do another writing project in future but for now it’s lots of styling for other people’s cookbooks and magazines which fill my time
