Chicken, Bacon and Halloumi Ciabatta

Ingredients


1 ciabatta
1 avocado
1 beef tomato
1 halloumi block
1 cooked chicken breast
4 rashers smoked streaky bacon
2tbsp runny honey
1tsp nigella seeds
3tbsp mayonnaise
2tsp nduja paste
Few baby gem leaves

Instructions

  1. Cut the chicken breast into thick slices. Slice the halloumi into 1-2cm slices. Thinly slice the avocado, tomato and set aside.
  2. In a frying pan, heat 1 tsp oil on a medium-high heat. Add the bacon and cook for 2-3 minutes or until the bacon is golden and crisp. Turn the bacon and repeat on the other side before removing from the pan and draining on some kitchen paper.
  3. In another pan, heat 1 tsp oil on a medium-high heat. Add the halloumi slices and cook for 2-3 minutes or until the halloumi is golden. Turn the halloumi and repeat on the other side. Once this side is golden, add the honey and nigella seeds and remove from the heat.
  4. Cut the ciabatta in half and drizzle with oil. Heat the griddle pan and once smoking hot, chargrill the cut side of the ciabatta.
  5. Mix the mayonnaise and nduja paste and spread onto one side of the ciabatta.
  6. Build your sandwich in whichever order you fancy. Top with the remaining ciabatta and enjoy.
