Apple and Rum Punch

If you're a little over mulled wine but would love a warming drink to see you into the New Year, this punch will perk up any party!


Makes 1 1/2 Litres

Pared zest of 1 lemon
6 cloves
6 juniper or allspice berries
3 cinnamon sticks
1/2 nutmeg
1.1 litres medium cider
150ml orange juice
150ml water
225g soft light brown sugar
150ml dark rum

To decorate
Pared zest of 1 orange and 1 lemon


  1. Tie the lemon zest, cloves, juniper or allspice berries, cinammon sticks and nutmeg together in a small piece of muslin.
  2. Pour the cider, orange juice and water into a large saucepan, add a bag of spices and heat very gently to simmering point, then remove from the heat, add the sugar and stir to dissolve. Remove the spice bag.
  3. Add the rum and the orange and lemon zest, then serve immediately.
