Angela Malik's Spiced Pear and Walnut Chutney

Did you spot Leiths alumna, Angela Malik, on C4's 'Kirstie's Handmade Christmas'? You can gift a jar of her amazing chutney to your own family and friends with this simple recipe.
Ingredients
750g pears (you can use any pears but go for a dessert type, I use Rocha)
1 large cooking apple
110g onions
60g sultanas
60g dried cranberries
1 orange (juice and grated rind)
225g soft brown sugar
350ml cider vinegar
60g walnuts
1 tsp cinnamon powder
1 tsp coriander powder
3/4 tsp ground cinnamon
1/2 tsp allspice
Instructions
- Peel, core and chop the pears and apples. Peel and chop the onions.
- Put into a large pan with the vinegar and stir well with a wooden spoon.
- Bring to the boil, stirring occasionally. Reduce to a simmer and continue simmering for around 45 minutes, stirring occasionally.
- Whilst the fruit/onion is simmering, put the sultanas, cranberries and orange rind into a small bowl and pour over the orange juice, then leave to soak.
- Add the spices, sugar, soaked fruit, rind and juice to the pan. Heat gently until the sugar has dissolved and then simmer for a further 45 minutes until the chutney is thick and there is no excess liquid.
- Chop the walnuts roughly and toast in a non-stick pan for about 5 minutes on a low heat, stirring until lightly coloured.
- Stir the walnuts into the chutney.
- Ladle into hot, clean, sterilised jars, cover and seal.
- Label when fully cool.
Leave for at least a month to allow to mature. For gifting this Christmas, you can add an 'Open me after' date to allow ample maturing time.
