American Style Pancakes

Ingredients
American Style Pancakes
225g plain flour
1 pinch of salt
3 tsp white sugar
2½ tsp baking powder
2 eggs (beaten)
30g butter (melted and cooled)
300ml milk
A little butter for frying
Blueberries and maple syrup to serve
Instructions
- Sift the flour, salt, sugar and baking powder into a bowl and then make a well.
- Add the beaten eggs, melted butter and milk and stir in the centre of the well gradually drawing in the dry ingredients to create a smooth batter.
- Transfer to a jug.
- Melt a small nut of butter in a non-stick frying pan and allow to foam.
- When the butter is foaming pour in some of the pancake mix to approx. 10cm diameter.
- When the upper side of the pancake starts to bubble you can start to flip the pancakes and finish cooking on the other side. This will take a couple of minutes.
- Serve with blueberries and maple syrup.
