The Graduate: Craig Morrison

Just over two years after graduating, a Leiths Student of the Year has landed a dream job in recipe development.

Just six days after graduating as Leiths ‘Student of the Year’, Craig Morrison moved to Australia with his partner. ‘It was just kind of a natural break and we were ready to go. I don’t think we’d planned to make it that quick a turnaround.’  

Craig’s first job was at Marley Spoon, HelloFresh’s biggest competitor in Australia. ‘It was recipe development with a little bit of product stuff. The most similar thing here is Gousto – it’s kind of like a bougie Gousto.’  

After returning to the UK, Craig eventually landed a job at BOSH! TV, the biggest plant-based online recipe channel in the world. He explains his role: ‘It’s twice a week that we film and then there’s videographers and editors, I’m kind of the “hands and pans” person.’  

On viral recipe reels, Craig notes, ‘We posted one of my recipes, which was a beetroot bed with crispy potatoes and that’s performed really well.’  

The Leiths training, he says, has proven invaluable.  

‘I’d say that almost every single day I’m using something that I learnt when I was at Leiths. 

‘Genuinely. Whether it’s seasoning or “Why do we brown things? For colour and flavour.’’’  

He adds, ‘Someone will ask me “How do you make a mayo?” and I go “it’s lecithin and mustard” and I can remember Michael Cropp [Leiths Principal] saying those words.’  

For those looking to enter the recipe development industry, Craig suggests you email everyone you can, create a network early and don’t be afraid of annoying people. ‘99% of the time people in this industry are really nice.’
